Nothing is odd about the contrail. The caption is Ian's.

It appears that the Airbus A319 is the other aircraft that features later on. Black arrow marks Ian's aircraft (Boeing 737). From 07:14 in the video and likely the A319. Ian thinks these airliners are turning and flying parallel with his aircraft. It is purely perspective that is confusing him.

Major mistake by Max. Claims that trails are coming directly from the engine. A quick snapshot and invert highlights the reality. Yet another major mistake.
